The Ultimate (Secretly Healthy) Cookie Dough Brownies

Almost any time I go to my friends’ houses for a party, get-together, or even just to hang out I’ll bring a dessert of some sort.

And, without fail, every time I’ll promise that it’ll be the “Ultimate Dessert!”

However, it can be a little tricky for my desserts to live up to this title if they’re just classic brownies, cookies, or even generic cupcakes. So, I’ve found that visiting the “dessert” tag on Pinterest has become a necessity of mine! Because not only do Pinterest desserts look (and taste) delicious, they’re also almost always some combination of two of my favorite desserts. And there’s no better way to make something the “ultimate” treat, than by making it a “brownie-cookie” or “snickers cupcake”.

These Cookie Dough Brownies are most certainly the ultimate brownies. Because not only are they fudgy, decadent, chocolate brownies… but they’re soft, brown-sugary cookie dough squares too!

I know what you must be thinking: if this really is a Pinterest-worthy ultimate recipe, then these brownies have got to be no less than 300 calories each. However, that’s where you would be mistaken, my friend! These brownies are only 123 calories each. Plus, they each have 4g fiber, only 6g fat, and 5g sugar.

Yes, these brownies are indeed magic.

The Ultimate (Secretly Healthy) Cookie Dough Brownies

*Adapted from my Ultimate Fudgy Brownies Recipe

Brownies

  • 1 1/4 c old fashioned oats (or 1 c plus 1 tbs gluten free flour)
  • 1/2 tsp xanthan gum (or ground flax seeds)
  • 1/2 tsp baking powder
  • 3/4 c unsweetened cocoa powder
  • 3 tbs nut butter of choice
  • 1 c stevia (or sugar)
  • 1/4 c unsweetened applesauce
  • 1/4 c egg whites
  • 1 tsp vanilla extract
  • 1/4 c plus 2 tbs milk of choice (I used almond milk)
  • 1/2 c chocolate chips
  • 1/2 c hot water

Cookie Dough

  • 1 c old fashioned oats (or 3/4 c plus 2 tbs gluten free flour)
  • 2 tbs nut butter of choice (I used almond butter)
  • 2 tbs unsweetened applesauce
  • 1/2 tsp vanilla extract
  • 1/2 tbs molasses
  • 1/2 c stevia (or sugar)
  • 1 tbs milk of choice
  • 1 tbs mini chocolate chips

First, make the cookie dough. Start off by processing oats in a food processor or blender until they reach the consistency of oat flour. Then pour them in a bowl and add all other ingredients except mini chocolate chips and stir until smooth. Add chocolate chips and stir until combined. Scoop into a bowl and place in the fridge.

Preheat oven to 350°F. Next, to make the brownie dough, add the oats to a food processor and blend until they reach the consistency of oat flour. Pour into a large bowl and add xanthan gum, baking powder, and cocoa powder, then mix together. Add nut butter, stevia, applesauce, egg whites, vanilla, and milk and stir until combined. Melt chocolate chips in the microwave then stir into batter. Stir in hot water until the mixture is smooth and has thinned up a bit (however, it should still be thick enough to spread around). Grease an 8″x8″ glass pan. Scoop in about 1/3 of the brownie batter and smooth into a thin layer at the bottom of the pan with a knife. Remove cookie dough from the fridge. Press little pieces of the dough into the brownies until it’s all been used and the brownie layer is mostly covered. Scoop remaining brownie batter on top and smooth with a clean knife. (If the batter starts to stick to the knife just run it under cold water for a few seconds.) Bake for 20-22 minutes, or until a toothpick comes out clean. Let cool, slice, and enjoy!
