Oatmeal Banana Bread Waffle (*vegan*)

The great thing about this waffle is that it isn’t good in spite of being vegan.


It’s good because it’s vegan!

I’ve found that recently, a lot of the waffles that I make with eggs tend to get really hard in the waffle iron before they’ve even fully cooked. Meaning that by the time a waffle is baked through, the outside has gotten over-crispy, resulting in a dense, chewy texture that is the exact opposite from what you want in a waffle.

On the contrary, this waffle comes out super soft, moist, and fluffy once it has baked! Plus, the addition of the oats to the batter creates a nice chewy texture, without allowing the waffle to get too hard.


The trick to a moist, fluffy vegan waffle is to use two rising agents: baking powder and baking soda paired with vinegar. The basic baking soda will react with the acidic vinegar, creating air bubbles in the batter that lead to a fluffier, softer waffle. On the other hand, the baking powder works in two stages: it will immediately create air bubbles in the batter in stage one, then in stage two it will react with the heat in cooking to cause the waffle to rise. The result is one delicious, fluffy waffle!


My theory for why my waffles made with eggs end up hard revolves around the protein contained in eggs. When the batter is cooked, the proteins will rearrange with the heat into an expanded structure containing more air. Unfortunately, this causes the waffle to raise so much that the batter is pressed hard against the waffle irons, causing it to toast and harden before the inside of the waffle has time to cook.

So in this case, not only is this vegan recipe better for you than a classic waffle recipe. But, it also just has a yummier result in general!

Oatmeal Banana Bread Waffle

  • 1/4 c old fashioned oats plus 2 tbs
  • 1 small banana
  • 1/4 c unsweetened almond milk
  • 1/4 tsp baking soda
  • 1/2 tsp apple cider vinegar
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp baking powder

Add 1/4c oats to a blender and process until the consistency of oat flour is reached. Add all remaining ingredients (except 2 tbs oats) to blender and blend until smooth. Stir in additional oats. Heat up a waffle iron and grease with cooking spray. Pour batter onto iron (if using an 8 in belgian waffle iron), close iron, and allow the waffle to cook for about 3 minutes (time may vary based on size). Once it’s cooked through, plate it and top with desired fruit, syrup, etc. Enjoy!
