Instant Pot Thai-Inspired Chicken and Rice

A few weeks ago, my oven broke so I borrowed my friend’s Instant Pot while waiting for the parts to come in.

I decided to make a Thai-Inspired Chicken and Rice dish using a jar of Trader Joe’s Thai Style Green Chili Sauce that I had in my fridge. Boy is it delicious!! It has just the right amount of spice, combined with a bit of a tangy flavor and a savory layer from the chicken thighs. This dish couldn’t be easier, taking only 30 minutes from start to finish. It’s a great one to meal-prep ahead for the week, or make at night for a busy family!

Instant Pot Thai-Inspired Chicken and Rice

  • 1tbs olive oil
  • 1lb boneless chicken thighs, cubed
  • 1c dry brown rice
  • 1 medium onion
  • 1 medium green bell pepper
  • 2c low sodium chicken stock
  • 6tbs Trader Joe’s Thai Style Green Chili Sauce

Cut medium onion and green bell pepper into slices. Set Instant Pot to sauté. Add olive oil. Add medium onion and green bell pepper and sauté for about 5 minutes, until onion starts to get a bit translucent. Add chicken thighs, brown rice, chicken stock, and green chili sauce. Set to “pressure cook” for 25 minutes. Once it’s done, make sure you release the steam. Then open the instant pot and stir the chicken and rice. There may be a bit of liquid leftover, which should absorb into the rice as it sits. Make sure chicken is cooked through (meat thermometer should read at least 165F. Enjoy!
