Cinnamon Raisin Cookies…
For Breakfast.
Sorry for my hiatus for the past two months, things got pretty crazy around here and I didn’t have a chance to post any new healthy recipes.
But that only means that I have TONS of new healthy recipes to share! Including: Italian Pasta Sauté, Super Healthy Coconut Ice Cream, and The HEALTHIEST Chocolate Chip Cookie you’ll ever eat.
But until then, why don’t you enjoy dessert for breakfast. In the form of a super fat, super satisfying pancake.
I could literally eat these all day. And covered with strawberries? Talk about a little piece of Heaven on earth.
The best part? You can eat them all and not feel guilty
Cinnamon Raisin Pancakes for One
- 1/4 c whole wheat flour (spooned and leveled)
- 3 tbs rolled oats
- 1 tsp cinnamon
- 1/2 tsp vanilla extract
- 2/3 tsp baking powder
- 1/2 tbs stevia (1 tsp for less sweet pancakes)
- 1 tbs egg beaters
- 3 tbs milk of choice (I used almond coconut milk)
- 1 tbs of coconut oil (if you don’t mind the taste of fat free pancakes, replace with 1 more tbs of milk)
- 1 tbs raisins
In a small bowl, mix all dry ingredients together. Add milk, oil, and egg beaters and stir until just combined (don’t over mix or the pancakes will be tough). Throw in raisins and mix a few times, until all the raisins are combined. Heat up a greased pan or griddle and plop spoonfuls of the mix onto it. Cook on medium, flipping each once or twice. Flip onto a plate, cover with strawberries, blueberries, powdered sugar, or a ton of maple syrup. Enjoy!
