Slow Cooker Beef Stew

In these cold winter months, there’s nothing like a warm bowl of beef stew to come home to.

This slow cooker beef stew is perfect, because you can throw it together before leaving for work and it will be ready to enjoy as soon as you get home! It’s made of all whole, yummy ingredients and will definitely leave you full and satisfied. For an even heartier meal, pair with part of a crusty baguette or a whole-wheat dinner roll.

Or be like me, and just wrap yourself in a nice warm blanket, take a seat by the fire (or in my case, your space-heater), and enjoy the stew as-is!

Slow Cooker Beef Stew

  • 2c organic beef broth
  • 1/2c celery, chopped
  • 1/2c carrots, chopped
  • 4 cloves garlic, crushed
  • 1lb beef stew meat, chopped
  • 1lb russet potatoes, skinned and chopped
  • 1 medium onion, chopped
  • 1/2c red wine (optional)

Add all ingredients to a crock pot. Beef broth should be covering all ingredients. If not, you can add another cup of beef broth or water. Cook on medium for 7 hours or on high for 3 1/2 hours, or until potatoes are tender and meat is cooked through.
