Have you ever been down the wire?
And not just baking a cake two hours before your birthday party or hitting “check out” just as an online sale closed. But really cutting it close. Like pulling into the gas station just as your gas gauge hits empty, or turning in a paper seconds before it’s counted as late.
Tonight I was really down to the wire… with this post.
It all happened when I got my license. Well, when my mom finally let me drive alone, to be precise. Yesterday after school ended, my mom picked me up around 3:30 and we drove to my aunt’s house to pick up her old car (aka. my new car!). But with great power, comes great responsibility (as someone from Spiderman once said, if I remember correctly). Meaning, I’m now obligated to drive my two younger sisters all over the city to get to their various functions, sports, etc.
So today I woke up early and drove to pick up my car from its inspection (turns out we actually have a lot to fix before I can really drive it without any worries… yay!) and grab donuts. Afterwards I returned home to whip up a batch of these (I noticed the corn meal sitting in my cabinet the other day, leftover from these Homemade Protein-Packed Peanut Butter Cornflakes) Healthy Honey Cornbread Muffins and proceeded to stress about homework until I drove to a friend’s house to spend the night.
Well, I promised myself that while at my friend’s house, I’d get at least a little bit of homework done. So for the past three hours, we’ve been cranking out AP Calculus and AP Chem homework, (hip hip hooray, that’s exactly how I hope to spend my Saturday nights!). Of course, that meant that I didn’t quite get to posting this until, well, 12:23 AM.
And like I was saying earlier, I’m going to be driving my sisters here, there, and everywhere from now on, so I’ll be waking up at 8:30 tomorrow morning to pick her up from a friends.
Luckily, my mom’s decided we’re all going to go out for biscuits afterwards, so I’m not complaining. 😉
Although, these Healthy Honey Cornbread Muffins could definitely give any biscuit a run for it’s money. Sweetened with a tad of honey and sprinkled with chocolate chips, these babies are so good you’d never believe they were made with applesauce and whole wheat flour! And they’re the perfect size to pop in a sandwich bag and bring on the road, or even pop in your mouth as a quick snack!
Regardless of how you enjoy them, these muffins were well worth rushing for!
Healthy Honey Cornbread Muffins
- 1 c corn meal
- 1/2 c whole wheat flour
- 1/2 c brown rice flour (or other gluten free flour)
- 3 tbs stevia
- 1/4 c honey
- 3 tsp baking powder
- 1 tsp baking soda
- 3/4 c milk of choice (I used organic 2% milk)
- 1 egg
- 2 tbs applesauce
- 2 tbs melted coconut oil
Preheat oven to 425°F. Combine corn meal, flours, stevia, baking powder, and baking soda in a small bowl. In a large bowl, combine honey, egg, applesauce, and coconut oil. While stirring slowly, add flour mixture and milk, alternating between the two. Once fully combined, grease a mini muffin tin (line with mini cupcake liners if desired) and fill each 2/3 full. Bake for 8-12 minutes, or until a toothpick comes out clean. Remove from the oven and enjoy!
