What are some of your favorite foods?
I tend to lean to the “sweet” side of the food group (if dessert is counted as a food group) when asked this question. My favorites are peanut butter, chocolate chip cookies, carrot cake, and coffee ice cream, to name just a few. And we all know I can’t resist anything chocolate! But aside from that, I love most other food too much to pick favorites.
Of course, one food definitely stands out on the list: Peanut butter.
Peanut butter is one of my biggest weaknesses. And I’m not talking about that smooth, creamy peanut butter. I like it crunchy. And I like a lot of it.
There’s a point when peanut butter stops being healthy and takes a turn towards guilt-inducing. Such as after your fourth heaping spoonful straight from the jar. So I try to keep it locked up in my pantry at all times. Out of sight, out of mind, right?
The reason why I like peanut butter so much is probably because it’s so rich. You’d think that would stop me from going back for another spoonful, or even eating it straight out of the jar, but unfortunately peanut butter never seems to satisfy me. Which is why I’m having such trouble with these Peanut Butter Chocolate Chip Cookie Bars.
I know, I’m mad at myself too. Seriously Havens, how could you ever think you’d be able to resist a dessert made up of two of your favorite things? These cookie bars are rich and decadent due to the peanut butter, all the while tasting just like Chocolate Chip Cookies and practically dripping with chocolate.
Truth be told, I scarfed down two the minute they were cool. (I learned my lesson from the last time I tried gobbling up a cookie before it was cool… can you say scalded taste buds?)
Luckily, they don’t contain butter, sugar, or flour. So I didn’t feel too guilty. Really, the only guilt-inducing ingredient in these babies are the chocolate chips, and I wouldn’t give those up for anything!
Forget eating peanut butter out of the jar, why not just bake it into cookie bars and gobble those up instead? 😉
Peanut Butter Chocolate Chip Cookie Bars
- 1 c old fashioned oats
- 1/4 c whole wheat flour
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 3/4 c crunchy peanut butter
- 2 tbs melted coconut oil
- 1 c stevia
- 1/2 tbs molasses
- 1 egg
- 2 tsp vanilla extract
- 2 tbs milk of choice (I used almond milk)
- 1/2 c chocolate chips
Preheat oven to 350°F. Blend oats in a food processor or blender until they’ve reached the consistency of oat flour. In a large bowl, combine stevia, molasses, melted coconut oil, and chunky peanut butter, mixing on medium for 3 minutes. Add egg and vanilla extract and continue to mix. Slowly add ground oats, whole wheat flour, baking soda, and baking powder. Stir until just combined. Fold in chocolate chips. Line an 8″x8″ pan with aluminum and grease. Bake for 18-20 minutes, or until a toothpick comes out clean. Let cool completely. Remove bars from pan by lifting up foil and set on the counter. Slice and enjoy!
