I. Love. Coffee. Ice Cream.
I may not be that big a fan of regular coffee unless it’s drowning in sugar and creamer, but let me tell you, put a carton of coffee ice cream in front of me and you won’t see that carton again. Until it’s in the trash… Ten minutes later… Empty.
So why not create a recipe for guilt-free coffee ice cream that you can enjoy any time of the day (even for breakfast, it’s that healthy).
I’m sure you have all heard of the famous one-ingredient banana ice cream. Where you just cut up a banana, stick it in the freezer, 3 hours later pop it out, throw it in a food processor, and you have yourself some healthy ice cream.
I may or may not be obsessed with this ice cream. And the fact that it’s actually good for you continues to blow my mind.
So adding coffee to this recipe just seemed like a given to me. Healthy coffee ice cream. It doesn’t get better than that.
Healthy Coffee Ice Cream
- 1 banana
- 1 tbs coffee
- 1/2 tbs instant coffee
- 1/4 tsp vanilla
- 1/2 tsp coffee creamer (if desired)
- stevia to taste
Cut up banana into a small container. Place in freezer for three hours, or until frozen. In the meantime, freeze about 1 tbs coffee in a small container or ice tray, as well. Combine frozen banana coins and frozen coffee in a food processor or blender and blend until smooth. Add instant coffee, vanilla, and coffee creamer (if desired). Blend again until all ingredients are incorporated. Add stevia to taste. Scoop into a bowl or and enjoy as soft serve, or pop back into the freezer for about 15 minutes before removing and enjoying!
