Everyone’s had that one slice of coconut cream pie that sent them over the moon. The gooey consistency of the creamy, sweet coconut dessert combined with the whipped cream and toasted coconut… Mmmmhhh, I’m getting hungry just thinking about it.
Not to worry, now you can have coconut cream pie for breakfast.
Yes, for breakfast.
Oh, and did I mention it’s healthy?
And not “pretty healthy” or “healthier than most”, flat out healthy.
Need I say more?
Coconut Cream Pie Overnight Oatmeal
- 1/3 c old fashioned oats
- 2/3 c almond coconut milk
- 2 tbs reduced fat unsweetened coconut flakes
- 1/2 banana
- 1 tsp flax seeds
- 1/2 tbs chopped pecans
- stevia to taste
Mash half a banana into the bottom of a mason jar or bowl. Combine coconut flakes, flax seeds, and rolled oats with mashed banana. Stir in coconut-almond milk and set in the fridge overnight. In the morning, sweeten with stevia (to taste), mix in chopped pecans, and enjoy!
