Five Ingredient Peanut Butter Cookies

My philosophy is this: everything tastes better with peanut butter.

I don’t know what it is about it, but peanut butter has always been one of my favorite foods. From eating it out of a jar as a kid, to refueling after a workout with a homemade Peanut Butter Granola Bar, I’ve never grown tired of the rich, nutty “butter”. Of course, this isn’t necessarily a good thing, considering how high in calories peanut butter can be. I guess you can say, moderation is definitely key when it comes to PB. (Haha that rhymed!)

So, of course, getting my daily peanut butter fix can be quite a struggle… due to the fact that it seems like when I start, I just can’t stop. And allowing myself anywhere near that PB jar with a spoon usually ends in an empty jar, and a heck of a lot of guilt. Luckily, I finally have a solution to my PB problem (obsession?).

Peanut butter cookies. Well, more specifically, healthy peanut butter cookies. Healthy, guilt free peanut butter cookiesHealthy, guilt free, five ingredient peanut butter cookies.

Basically the tastiest, and easiest, PB cookies you’ll ever eat.

What I love most about these cookies isn’t how healthy, guilt-free, or easy they are. No sirree, it’s the fact that they literally take two minutes to whip together and ten minutes (tops) to bake. That’s twelve minutes, less than 1/4 of an hour, and bam! you’ve got yourself a batch of peanut butter cookies.

Even better, the ingredients are so simple there’s almost no way they won’t already be in your pantry! Peanut butter (check!), stevia (check! And if not, another sugar substitute or white sugar would work too!), egg (check! Even though it’s in your fridge, not pantry), oats (double check!), and honey (check!!).

As easy as five ingredients, 12 minutes, and a growling belly? (Or is that just me?)

Five Ingredient Peanut Butter Cookies

  • 1 c peanut butter
  • 1 c stevia
  • 1 egg
  • 1/2 c old fashioned oats
  • 2 tbs honey

Preheat oven to 350°F. Process 1/2 c oats in a blender or food processor until they’ve reached a flour-like consistency. In a large mixing bowl, combine peanut butter, stevia, and egg. Once doughy, mix in oat flour and honey until combined. Grease a cookie sheet and scoop out tablespoons of the cookie dough. Roll into balls and place 1 1/2  to 2 in apart. Using the back of a fork, press down to create a cross pattern. Bake for 8-10 minutes, or until golden on the bottom. Remove from oven and place on wire rack immediately to cool. Enjoy!

  1. Do you think I can sub another form of sweetner for the stevia? I am obsessed with peanut butter! YUM! I love PB Puffins cereal, PB granola, PB&J, peanuts, you name it!
