Quick & Easy Carry-On Snacks

I hope you all are having a wonderful July! Here in the US, most kids are on summer break. And in my case, I still have a month and a half left before I go back to high school in the fall.

So, surprise! I’m going to Paris! (Before my summer ends in the blink of an eye…)

It’s a family tradition in my family for each girl in the family to be given a trip to their city of choice for their sixteenth birthday present. And when I turned sixteen this year and my aunt asked me where I wanted to go, after much thought I decided on the city of love, food, and light. Paris!

I’m leaving today and won’t return until next Saturday, and with packing, preparing, and scrambling to remember as much as possible from my 6 years of French, I unfortunately haven’t had much time to come up with any new SST recipes.

So today, with only 30 minutes before I have to leave for the airport (bad planning, right?) I’ll be sharing with you all some of my favorite snacks to bring on the road/in your carry-on.

These snacks are easy, healthy, and definitely quick to prepare. Not to mention, they’re perfect for snacking on if you get hungry at baggage claim, in the car, or even during your break at work!

And they’re even more amazing if you’re like me and tend to be a bit of a procrastinator when it comes to getting ready. You can just throw them in a plastic bag, toss them into your purse, and get on your way!

“Grazer Friendly” Trail Mix

Perfect for those of you who, like me, find yourself grazing all day instead of setting on one specific snack!

  • 1/4 c skinny pop popcorn (or other air-popped option)
  • 1/2 tbs almonds
  • 1 tbs reduced sugar dried cranberries
  • 1/2 tbs roasted & salted sunflower seeds
  • 12 pretzel snaps
  • 1/2 tbs roasted & unsalted cashews

Pour everything in a bag or small bowl. Enjoy!

Peanut Butter & Honey Apple Sandwiches

These apple sandwiches and probably the healthiest “sandwiches” you’ll ever eat. Plus, they’re the perfect snack to munch on if you’re not one for airport food, or just get snacky in the car!

  • 1 large apple of choice
  • 2 tbs natural peanut butter
  • 1/2 tsp honey
  • 2 tbs old fashioned oats
  • pinch of cinnamon
  • 1/2 tbs raisins (optional)

Core apple. Cut into 6 thin slices. In a small bowl, combine peanut butter and oats. Spread on one side of three apple slices. Top these slices with raisins, if desired, and drizzle with honey and a pinch of cinnamon. Top with remaining 3 apple slices. Enjoy!
