I’m enjoying this muffin as I type.
Have you ever arrived home following a kick-butt strength training workout and found yourself craving protein? Bacon, chicken, scrambled eggs: I want it all! Yet, at the same time, I’m way too hungry (and impatient) to wait a whole fifteen minutes for the chicken to cook.
Also, I have a huge sweet tooth. So naturally, I also want something sweet!
This Muffin in a Mug is the perfect solution: it’s packed with protein (17g!!) and made with much healthier ingredients than those you would find in a typical chocolate chip muffin.
Also, for only 220 calories this giant muffin is literally stuffed with chocolate chips… Or chocolate chunks if you’re like me and love a big forkful of gooey melted chocolate.
While this muffin has the consistency of a moist, perfect muffin, without the addition of any oil, may I add, it tastes just like a warm, fresh baked chocolate chip cookie. And it’s good for you!!
Although you may use another granulated sweetener of your choice in this recipe, the brown sugar gives the muffin its chocolate chip cookie-like flavor. And come on people, a little suga never hurt nobody!
Especially directly following a kick-butt workout!! 😀
Chocolate Chip Protein Muffin in a Mug
- 3 tbs (1 scoop) vanilla protein powder (or other flour of choice)
- 1 tbs coconut flour
- 1 tsp baking powder
- 1/4 tsp vanilla
- 1/4 tsp cinnamon
- 1 1/2 tbs brown sugar (or granulated sweetener of choice)
- 1 tbs egg whites
- 3 tbs milk of choice (I used almond milk)
- 1/2 tbs chocolate chips
Combine dry ingredients (excluding chocolate chips) in a small bowl. Add egg whites and milk of choice, a tablespoon at a time, and stir until smoothly combined. Stir in chocolate chips. Grease a mug and pour in batter. Microwave on high for 1 minutes to 1 minute 30 seconds (depending on your microwave). Remove, top with desired toppings, and enjoy!
