I’m back from my short hiatus! And like I said in my last Instagram post, I have tons of new ideas for healthy & delicious treats!
When I was in Paris I tried a variety of new foods (including escargot… yuck!), most of them desserts. And by far, one of my favorite desserts from the trip was a dessert called Fondant au Chocolat. Fondant au Chocolat is basically the french version of Chocolate Lava Cake. And let me tell you, it changed how I view chocolate, cake, and single serving desserts forever.
You’re probably thinking that I’m slightly exaggerating. I mean, how could one single dessert change my view of all other desserts? Well, let me first give you a little background about my relationship with desserts. I’m a batter kind of girl. If you were to ask me if I’d rather eat brownie batter or brownies, I’d say brownie batter. And if you were to ask me if I prefer chocolate chip cookie dough or chocolate chip cookies, I’d reply “the dough!” without a moment’s hesitation.
That doesn’t mean I don’t like the finished dessert at all, though! I adore both chocolate chip cookies and brownies! Which is why I usually eat half the batter before baking the other half and eating the rest of the dessert.
Another fact about me is that I’m horrible at making decisions. I honestly can never decide whether I’d rather eat the batter or the actual dessert. And while I may actually like the batter better, that doesn’t mean I wouldn’t rather have them both.
So, in short, this dessert is perfect for me. Instead of having to decide if I want the batter or the actual chocolate cake, this chocolate lava cake is basically two in one: while the outside’s a fully cooked chocolate cake, the center is still gooey and flows out like “lava” when cut into (hence the name).
And even though I just got home yesterday, I woke up already craving the Chocolate Lava Cake I enjoyed in Paris. And as you can guess, I immediately decided to create a healthier version of one, which doesn’t include any butter, sugar, or white flour.
Let me tell you, if you try this, it’ll change how you view desserts forever, too!
Dark Chocolate Lava Cake
- 8 dark chocolate chips (about 2 tsp)
- 2 tsp coconut oil
- 1 tbs brown rice flour (or other gluten free flour)
- 2 tbs warm almond milk
- 1 tbs egg whites
- 1 1/2 tbs stevia (or to taste)
- 2 tbs unsweetened cocoa powder
Preheat oven to 400°F. In a small bowl, combine chocolate chips and coconut oil. Microwave on high for 15 seconds, then stir until fully melted. Add brown rice flour, almond milk, egg whites, and stevia, stirring continuously. Add cocoa powder and stir until smooth. Pour batter into a greased ramekin. Set in the freezer for 20 minutes. Remove and bake for 10 minutes, or until edges are firm and center is still a bit liquidy. Remove and flip over on a plate. Enjoy!
