Happy Valentine’s Day!!
Okay be honest, how many guilt-inducing sweets have you snacked on today?
I personally spent half my night last night baking (cupcakes, chocolate dipped pretzels, sugar cookie sandwiches… you name it really), so it’s safe to say that even though I’ve been pretty good so far today, that probably won’t last very long.
But hey, it’s Valentine’s Day (aka single’s awareness day, aka PALentine’s Day, aka 1/2 the population’s least favorite day), you can’t just not eat chocolate.
Which is why these Chocolate Lovers Fruit Kabobs are perfect. You get your chocolate fix, but don’t feel incredibly guilty after have a second or third. Plus, if you bring these babies to a Valentine’s Day Party, I can bet they’ll be gone before the cupcakes.
Because even though they’re incredibly healthy, and a much better fruit-and-chocolate-combo option than chocolate-box chocolates, each one is incredibly decadent. And covered in chocolate. Need I say more?
Roses are red, violets are blue, eating healthy is fun, but without chocolate what would I do? 😉
Chocolate Lovers Valentine’s Day Fruit Kabobs
- 2 bananas
- 1/2 tbs coconut oil
- 1/4 c mini chocolate chips
- 1/2 c cut up pineapple
- 1/2 c sliced strawberries
- sprinkles, nuts, unsweetened coconut, or other toppings of choice
Slice bananas into 1/2- 1″ slices. Add coconut oil and mini chocolate chips to a bowl and pop in the microwave for 30 seconds. Remove and stir until fully melted. Dip banana in chocolate, using fork or skewer, then remove and sprinkle with chocolate, sprinkles, etc. Place on a sheet of wax paper and pop in the freezer for 15 minutes. Afterwards, remove from the freezer and slide onto a skewer. Layer strawberries and pineapple onto the skewer, between the bananas. Plate, serve, and enjoy!
