French Toast in a Mug

I’ve made my share of “mug recipes,” but I must admit, this one takes the cake.

While most mug recipes often take me multiple tries to perfect, this one was a one-stop-shop in that I created the recipe, tested it, and was completely and utterly satisfied. And in love! I mean, who doesn’t love a recipe that you can make in a mug and have like that?

For this recipe, I decided to use Udi’s Gluten Free bread and unsweetened coconut milk to ensure it was both gluten and dairy free. I then simply added all the classic French toast ingredients (ie. cinnamon, vanilla, and nutmeg) to a mug with an egg, stirred, and was ready to go! You’re on your way to a breakfast high in protein (12g!) and whole grains, without any of the butter typically used to make French Toast or powdered sugar.

But before you endeavor on this mug-recipe journey, I must give you a few key tips. Because unfortunately, the chemistry with microwave recipes is so finicky that if you microwave the dish just 15 seconds too long or forget one ingredient then your result may end up far from perfect. Instead, you may in fact be left with a steaming block of hard bread and sticky eggs.

Ew.

But don’t fear! Simply follow these tips and you will have nothing to fear! And will be left with the perfect, warm mug of cinnamon French toast.

  1. Use enough bread.

If your slices of bread are unusually small or thin, then you should plan on using three slices instead of two. Simply tear the bread up and press it all down into the egg-milk mixture. Let it sit for one minute, to allow the bread to soak up all the mixture.

  1. If the French toast begins to rise out of the mug, simply stop the microwave and place a paper towel under the mug to catch any excess milk

This happened to me near the end of the cooking time, due to the bubbling of the milk mixture. But don’t fear! As long as your mug is large enough, your French toast shouldn’t overflow, although you may want to place a napkin under the mug in the microwave just in case any milk bubbles out of the mug.

3.Don’t microwave it too long!

This is key! Once the french toast is nice and baked on top (about 1 minute and 30 seconds) you’re done!

And that’s it! Just follow these three simple steps and you’ll have on your hands a decadent mug of cinnamon French toast, perfect to drizzle real maple syrup over and enjoy!

The texture is just like that of pan-fried French toast, without all the greasy butter (and added saturated fat) and possible burn marks. What more could you ask for with a recipe you can make in the microwave?

French Toast in a Mug

  • 2-3 slices of bread of choice (Udi’s Gluten Free Whole Grain Bread)
  • 1 egg
  • 1/4 c milk of choice (I used unsweetened coconut milk)
  • 1/4 tsp vanilla extract
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg

Add all ingredients except bread to a mug and stir until fully combined. Tear bread slices into large pieces and press down into the mug. Let soak for 1 minute. Microwave for 1 minute and 30 seconds (or until cooked through). Remove and drizzle with maple syrup. Enjoy!
