I’m not joking when I say this Peanut Butter Bark literally melts in your mouth.

You take a bite and suddenly it’s gone. And all that’s left in its place is the decadent taste of peanut butter, vanilla, and coconut oil.
And, of course, whatever yummy toppings you choose to add to this bark!
One of the reasons why I love this recipe so much is because of just that: the toppings! They’re incredibly customizable- as you can just add whatever toppings you’re feeling at the moment! From nuts to coconut to cacao nibs, the possibilities (and combinations!) are endless. Meaning this recipe will never taste the same twice, or get boring.
Of course, how could you really get bored with something so delicious?

Sure, this bark is decadent. And not exactly low in calories. But it is made with healthy, whole ingredients: peanut butter, coconut oil, and honey.
In fact, it’s only 4 ingredients (plus the toppings of your choice!) and doesn’t include any powdered sugar, butter, or melted chocolate.
Although, on second thought, melted chocolate might be one heck of a delicious topping… 😉
And since it melts in your mouth so quickly, we can just pretend this bark doesn’t have any calories… Right?

Regardless, serve this to your friends or family and they’ll never be able to get enough of i!
This stuff is flat-out addictive. And worth every decadent bite!
Melt-In-Your-Mouth Peanut Butter Bark
- 1/2 c creamy peanut butter
- 1/4 c coconut oil
- 1/2 tsp vanilla extract
- 2 tbs honey
- 2 tbs add-ins of your choice (ex. chocolate chips, toasted coconut, granola, chopped nuts)
Add peanut butter, coconut oil, vanilla extract, and honey to a bowl and stir until combined. Microwave for 15 seconds, or until the mixture is relatively thin and very smooth. Line a cookie sheet with parchment paper or tin foil. Pour mixture onto cookie sheet and tilt the cookie sheet until the mixture has spread into an even, 1/4 inch layer. Top with add-ins of your choice. Freeze for 1 hour, or until solid. Remove and break into pieces. Enjoy! (If not eating right away, store in the freezer.)
