These Quest Bar Cookies are easy to make, cute, and full of protein!
If you’ve never had Quest Bars but are a fan of protein bars that are deceivingly similar in taste to candy bars then these are the bars for you! They come in a variety of flavors, from chocolate chip cookie dough (my personal favorite!), to s’mores, to mint chocolate chip (aka thin mints in a bar form!). But not only are they delicious, they have phenomenal macros!
For example, the bar I used for these cookies has 20g protein and 14g fiber, as well as only 1g sugar.
And it tastes like a cinnamon bun.
Don’t bother pinching yourself, because I can assure you that this is not a dream. These babies are real!
My favorite way to enjoy these protein bars is actually to heat them up, because they get warm and soft, and the flavors with chocolate chunks even melt a bit. Talk about heavenly. So why not just make them into cookies while you’re at it? 😉
Each of these cookies has only 40 calories, as well as 4g protein and 2g fiber. Plus they’re absolutely adorable and just plain delicious topped with a spoonful of healthy cream cheese icing and a toasted pecan.
And if you really want to get fancy, you can even throw some shredded coconut on top! I just thought of that while writing this, but I bet it would be divine.
The perfect treat post-workout, or even when you’re just trying to get through a 6 hour study session for a big government test, these cookies are healthy and delicious!
Cinnamon Bun Quest Bar Cookies
- 1 Cinnamon Roll Quest Bar Protein Bar
- 1 tsp whipped cream cheese
- 1 tsp 0% fat plain Greek yogurt
- sweetener to taste (such as stevia or powdered sugar)
- drop of vanilla extract
- 6 small pecans (about 1 tbs)
Preheat oven to 375ºF. Roll out Quest Bar with a rolling pin until about 1/4 inch thick. Cut into 6 small circles with a cookie cutter. Lay out on a greased cookie sheet and sprinkle with cinnamon and stevia. Bake for 3 minutes, or until golden brown and slightly puffy.
Meanwhile, combine cream cheese, yogurt, stevia (or other sweetener), and a drop of vanilla extract in a small bowl. Once cookies are finished baking, place a small dollop of icing on each one. Then top each with a pecan. Enjoy!
