I cannot be trusted when it comes to brownies.
Especially a whole batch of brownies, baked fresh from the oven. Ooey-gooey, chocolatey, and melt-in-your-mouth delicious.
Frankly, I can’t even be trusted with the batter; but that’s a whole different story.
No matter how many times I tell myself I’m just going to eat one… I always end up eating at least three. And after a point, even healthy brownies such as my Butterscotch Black Bean Brownies can become severely guilt-inducing. That is, after you’ve consumed half the batch and it’s barely noon.
On the other hand, unless it’s a Saturday afternoon and I have virtually nothing else to do, I almost never have the time to whip up an entire batch of brownies.
That’s when I turn to my favorite “single serving” desserts! In the past, I’ve posted a recipe for both a single serving Chocolate Chip Cookie and Chocolate Marbled Cupcake, so this brownie is just another addition to my list of quick and healthy desserts. And like the other two, this brownie can be made in both the microwave and the oven. As a result, it can only take about 5 minutes to make, bake, and gobble up.
A brownie in 5 minutes flat? Sounds too good to be true to me!!

Ooey-Gooey Double Chocolate Brownie for One
- 2 tbs old fashioned oats
- 1/8 tsp baking powder
- 2 tbs cocoa powder
- 1/2 tsp melted coconut oil
- 1 tbs milk of choice (I used almond milk)
- 2 tsp egg whites (or 2 tsp more milk)
- 1 tsp honey
- 1/4 tsp vanilla
- 1/2 tbs warm water
- 1/2 tbs chocolate chips
- stevia to taste (or sub with 2 tbs sugar)
Process oats in a coffee grinder or blender until they’ve reached the consistency of flour. If using an oven, preheat to 350°F and grease a ramekin or single muffin tin. Combine oats, baking powder, and cocoa powder in a small bowl. Stir in melted coconut oil, milk of choice, egg whites (or more milk), and vanilla. Stir in warm water to thin the mixture slightly. Add stevia to taste. If using a microwave, pour into a greased mug or ramekin, if using the oven, pour into the previously greased muffin pan (or ramekin). Top with chocolate chips. Microwave on high 35-40 seconds, or until fully cooked but still glossy. Let rest for 2 minute before serving. If using the oven, bake for 9-11 minutes, or until a toothpick comes out clean. Enjoy!
