You’re going to love this recipe!

I know, you were expecting the rest of Escape, or better known as: “the Piña Colada Song”. Well, I’ve had that song stuck in my head all day and decided to take it as a sign that I needed a piña colada… asap.

Of course, most piña coladas are packed with rum, sugar, and lots of flavored juices/syrups. There’s no rum in this recipe, and I can promise you there’s no added sugar either, but what there is are a handful of healthy ingredients. Ingredients so healthy that you can have this drink for breakfast without any regret or guilt whatsoever.

Actually, there are only two ingredients in this recipe. (Three if you count the ice.) Pineapple chunks and coconut milk. This means that you’ll be getting a healthy dose of your daily Vitamin C and Calcium while reminiscing about spring break spent on the beach, the sun on your skin, birds chirping, and waves whooshing faintly, lulling you to sleep…

Let’s face it, summer’s in less than three months and the beach is calling your name. So why not indulge yourself now with a taste of the sun?

Yes I like piña coladas… 

Piña Colada

  • 3/4 c frozen pineapple chunks
  • 2/3 c coconut milk
  • 1/2 c ice cubes

Pour all ingredients into a blender and pulse for 30 seconds. Then blend on high for 30 more seconds, until smooth and fully combined. Empty into a glass and enjoy!
