This brownie is so healthy you could eat it for breakfast.
Honestly, without any butter, sugar, or gluten, this is just as healthy as any other breakfast cereal on the market. Without all the highly processed ingredients.
Additionally, who doesn’t love waking up to a big. Plate. Of. CHOCOLATE.
Especially if it’s made using a recipe that takes one bowl and two minutes! Just add everything to a bowl, mix all the ingredients together, pour into a greased ramekin (and top with about 1000 chocolate chips), and sit back and relax as the aroma of baking chocolate fills your kitchen.
There’s really nothing better than that in my opinion.

Vegan Chocolate Brownie for One
- 3 tbs gluten free flour
- 1 tbs plus 1 tsp cocoa powder
- 1/3 mashed banana
- 1 tsp melted coconut oil
- 1/16 tsp vanilla
- 1/2 tsp baking powder
- 1 1/2 tbs hot water
- sweetener to taste
- 1 tsp vegan chocolate chips
Preheat oven to 350°F. Add all ingredients to a bowl and stir until combined. Pour into a greased ramekin. Bake for 23-25 minutes, or until an inserted toothpick comes out clean. Remove and enjoy!
