The Best Butternut Squash Fries

Imagine a never-ending platter of french fries that you can chow down on with no guilt whatsoever.

Now imagine the platter of fries are actually good for you. In fact, they’re healthy. So healthy that you should probably be rewarded for eating them… all.

This is the recipe for these “dream fries”. No, I’m not making them up. You’re not stuck in some crazy day-dream during your Monday morning meeting at work, either. And this certainly isn’t some misleading informercial either.

French fries that are less than forty calories? It’s not too good to be true. The secret? Butternut squash.

Don’t run screaming. If you’ve never had butternut squash fries, you’ve seriously been missing out. They’re just as crunchy as potato-fries, with the same, for lack of better word, “buttery” (or maybe just greasy…?) texture. And, as a bonus, you don’t have to slather them in ketchup or mustards to give them an actual taste. In fact, these fries are just plain amazing on their own!

But if you do decide to add in all the fix-ins, these fries are still almost completely guilt-free!

Having eaten a whole platter of these in less than 5 minutes, I can honestly say that they’re definitely the best.

The Best Butternut Squash Fries

  • 140 g (about 1 c) butternut squash (peeled, if desired)
  • Pam Olive Oil Cooking Spray
  • 1/2 tsp sea salt

Preheat oven to 350 °F. Slice a butternut squash into long strips resembling French fries until you’ve cut about 1 c (140 g) of squash. Spread strips across a lightly greased cookie sheet, about 1/2 in apart. Lightly spray with cooking spray for about 2 seconds. Sprinkle with sea salt. Bake in the oven for 30-35 minutes, or until slightly crispy.
