Tropical “Green” Smoothie

For the next week or two, Skinny Sweet Treats might be a little slack.

No worries, I’m not giving up on this blog or anything (I’m too in love with sweets to ever do that!), but honestly… I’m not allowed to be on my laptop/phone for more than 10 minutes at the moment.

Basically: I have a concussion.

I actually got it in soccer about a month ago, but since I usually create/bake most of the recipes on the weekend, and therefore always have four or five already made as backup, I didn’t think it would really impact my posting! Unfortunately, two things occurred this week. One: it got worse (I basically relapsed because of how much schoolwork I’ve been doing) and two: I ran out of recipes.

But no worries! I will still be posting every Sunday, Tuesday, and Thursday. (As of right now, at least!) And the “skinny sweet treats” will keep coming! The reason why I shared this with all of you is that I like to think that up until now, I’ve been pretty good about keeping you updated via Instagram, Pinterest, etc. And with these new time constraints regarding laptop/cellphone use, I probably won’t be as active on social media for a while!

So, aside from that, let’s get to today’s recipe!

Like I said, I usually bake most of my recipes on the weekend (typically I’ll pop out two or three Saturday, and one on Sunday… if time allows). Researching, creating, photographing, editing, and writing these posts just isn’t possible during the week, along with school, sports, etc! But since I’ve been relying on my “backup” recipes recently, and like I said, just ran out, today I’m going to show you one of my very favorite after workout/school/a long day snacks!

Generally, when I come home from school, I’m exhausted, grumpy, and very, very hungry! (I’m sure you know the feeling, if not, you’re one Lucky Duck!) So, the last thing I want to do is spend an hour in the kitchen whipping something up to eat. I need something quick, easy, and definitely energy-boosting!

This is usually when I pull out my blender! I’ve found, that one of my favorite pick-me-up snacks are green smoothies! No, don’t run away now! I know anything with “Green” in the tile scares the heck out of most people (I used to be one of those people, trust me!) but you can’t even taste the greens in this smoothie. Actually, if it wasn’t the brightest green you ever did see, I’d think it was just a classic tropical smoothie!

This smoothie is basically my favorite thing in the world. It’s packed with greens, which is great for me because I tend to eat starches, starches, and more starches when available… So I like to think this balances them out! Plus it’s full of vitamins & minerals that will leave your skin glowing, is super refreshing, and tastes like a tropical paradise.

Concussed or not, this smoothie would make my day… any day!

Tropical “Green” Smoothie

  • 1/2 banana
  • 5 medium strawberries (about 1/3 c)
  • 8 pieces of frozen mango (about 1/3 c)
  • 3 tbs coconut milk (or other milk of choice)
  • 2 1/2 c spinach
  • handful of ice
  • pinch of chia seeds
  • stevia to taste

Add banana, strawberries, mango, coconut milk, and spinach to a blender or magic bullet and blend on high for 1 minute, or until smooth. Add ice and blend until completely smooth (45 seconds to a minute). Add pinch of chia seeds and sweetener to taste and blend for 15 more seconds. Pour into a glass and enjoy!
