These cookies literally blew my mind.
Now, before you venture down to the bottom of this page and discover how many calories each cookie is, let me explain the ingredients that went into each one:
- Peanut butter.
Now although high in healthy fats and all natural (well, depending on the kind you use!), PB is generally pretty high in calories. Yes, the reduced fat reduces the fat content slightly, but it doesn’t decrease the calorie content significantly. So, check! These cookies are starting off on a healthy but high-calorie track!
- Pretzels.
You’ve gotta love pretzels. I mean, who doesn’t? They’re like the perfect crunchy, salty snack that actually doesn’t pack too much of a high-calorie or unhealthy punch! Not to mention, they pair great with PB, and are the perfect dipping-sticks.
- Hershey’s Kisses.
Although not the healthiest, the dark chocolate variety are at least slightly better. And when you see how many other healthy ingredients are included in these cookies (oats, whole wheat flour, light yogurt), you can definitely justify this addition a little better.
So all in all, these cookies don’t sound so bad. I mean, they’re made with mainly oats, whole wheat flour, light yogurt, a few eggs, a bit of stevia for sweetness… and that’s it. But when you really narrow down on what gives them they’re taste and flavor, it’s hard not to imagine them being about 200 calories each.
Okay… now check out the calories.
103 calories each… including the Hershey’s Kisses.
103 calories for a Chunky PB cookie (of crunchy peanut butter and salty pretzels) topped with a dark chocolate Hershey’s kiss, which practically melts in your mouth once cut into.
These cookies can be stored in an airtight container for a few days; aka at arms reach whenever you get the desire to pop one in the microwave for 10 seconds and enjoy it with a tall glass of ice-cold milk.
Because at only 103 calories, 13 carbs, and 4 grams of fat each, there’s no need to hide them away… enjoying one, two, or even three is perfectly okay! 😉
Chunky Peanut Butter Heaven Cookies
- 1/2 c reduced fat crunchy peanut butter
- 1 1/2 c old fashioned oats
- 1 c whole wheat flour
- 1/2 tsp baking soda
- 1 1/2 tsp baking powder
- 2 eggs
- 1/2 c stevia
- 3/4 c light vanilla yogurt
- 1 tsp vanilla extract
- 1/2 tsp all spice
- 1/2 c broken up pretzels (about 1 oz)
- 24 dark chocolate Hershey’s Kisses (optional)
Preheat oven to 375°F. Combine oats, flour, baking soda, baking powder, and stevia in a large bowl. Add eggs, yogurt, vanilla, and all spice and stir until combined. Mix in chunky peanut butter until completely combined. Add broken up pretzels and mix in. Scoop 2 tbs sized balls onto a cookie sheet. Bake for 8 minutes. Remove and press in kisses, if desired. Enjoy!
