What’s the easiest thing you know how to make?
And no, toast doesn’t count.
For me, it’s mac and cheese. And by that I mean Kraft Mac & Cheese from a box, just boil the pasta, add butter, milk, and the cheese packet and BAM mac and cheese.
This is easier.
Seriously, this recipe is one of the easiest I have ever made (if not the easiest). Here’s the low down: cut the watermelon. Freeze the watermelon. Blend the watermelon in a food processor. Eat.
And that’s it!
And trust me when I tell you that this watermelon Italian Ice is better than any watermelon Italian Ice you’ve had before. Not only is it unbelievably healthy (#oneingredientrecipesFTW) but when the watermelon is frozen, it brings out the sweetness (because all of the extra water is frozen as ice) and you’re left with such an unbelievably delicious dessert you’ll swear it’s unhealthy.
But like I said: it’s not!
This has already become my go-to recipe for a quick and easy dessert. We never have enough room in our fridge to store a whole container of cut up watermelon, so my new solution has become to store only half of it in the fridge, and freeze the other half for a quick and easy dessert later on! And did I mention this recipe is perfect for picky eaters? My sister won’t touch anything “healthy” with a ten foot pole, but she ate an entire container of Watermelon Italian Ice earlier today.
It’s that good.
And even if you do eat the whole thing, it’s so healthy that you could whip up some more and enjoy that as well, and still feel completely guiltless! 😉
Watermelon Italian Ice
- 2 c watermelon balls or cubes
Freeze for at least 8 hours, or overnight. Remove from freezer and pour into a food processor. (Note: you may have to run hot water along the outside of the container to loosen the watermelon. Also make sure to break apart into several pieces before attempting to blend). Process for 2-3 minutes, or until no large chunks remain. Scoop into a container and press down until smooth. Store in the freezer until ready to serve (may want to thaw on the counter a few minutes before serving) or enjoy straight away!
