Guilt Free (Secretly Vegan) Granola Bites

These Granola Bites are unbelievably healthy.

No, seriously, I still can’t believe how healthy they are!

They’re made with whole ingredients such as oats, raw nuts, and flax seeds, yet also include decadent dark chocolate chunks and cocoa powder. Not to mention, they’re completely gluten free, egg free, dairy free, and vegan. Oh, and good for you.

I was seriously this close to calling these cookies, because of how yummy they are. Even though they resemble granola due to the oats as well as mix-ins, such as nuts and maple syrup, they’re definitely yummy enough to be cookies.

Then again, that might be too unbelievable. I mean, have you ever heard of a 37 calorie cookie?

Because I haven’t and if they exist I’d definitely like to get my hands on them.

In the meantime, I’m going to stick with these delicious granola bites, because after all: you can eat three whole ones, chocolate and all for only about 100 calories.

The perfect snack between mealtimes, after dinner, or even before breakfast, one of these granola bites is definitely something yummy that you can feel good about.

Guilt Free (Secretly Vegan) Granola Bites

  • 1 c rolled oats
  • 1/4 c flax seed meal
  • 1/2 c plus 1 tbs water
  • 1 tsp cinnamon
  • 1 1/4 tsp baking powder
  • 3 tbs maple syrup
  • 1 tbs cocoa powder
  • 2 tbs gluten free flour of choice (I used coconut flour)
  • 1/4 c dark chocolate chunks
  • 1/4 c nuts of choice, chopped (I used raw almonds)
  • 1/4 tsp vanilla extract

Preheat oven to 350°F. Combine flax seed meal and water in a large bowl. Let sit for 5 minutes. Meanwhile, combine rolled oats, cinnamon, cocoa powder, gluten free flour, and baking powder in a large bowl. Add dry ingredients to flax seed mixture, then add maple syrup and vanilla extract and stir until a dough forms. Fold in dark chocolate chunks and nuts. Grease a cookie sheet and scoop tablespoon sized balls of the mixture onto the sheet. Bake for 8-11 minutes, or until golden brown. Enjoy! Store in the freezer or in a sealed container for up to four days.
