Healthy Cake.

Yes, I repeat: Healthy Cake…. Cake so healthy you can eat for breakfast.
These cake squares are my three favorite things: healthy, delicious, and cake!!
In all seriousness: I initially intended for these babies to be “granola bars”. But after baking them and tasting them for the first time, I discovered that they were as sweet and satisfying as a slice of your favorite autumn apple cake. Yet, they are so healthy it’s insane. First of all, they’re vegan and gluten free. Additionally, they aren’t made with any butter, sugar, or white flour. Instead, I added the healthy (and wholesome) local honey, flax seed meal, and applesauce.
So, in short: this is the healthiest cake you’ll ever taste.

And here’s a secret: they’re even delicious frozen.
Whhaaaat?
That’s right: store your “cake squares” in the freezer and you’ll have a tougher time deciding whether to heat one up or enjoy it cold than you did actually making the recipe. (Did I mention this is a one pan recipe? Yeah, it can’t get any easier).
Lastly, the topping. I topped my squares with almond butter, oats, a bit of granola, cinnamon, and more walnuts. And holy-heaven the result is even better than high-calorie icing.

And if I’m being honest, this cake is better than half the high-calorie cakes out there! 😉
Apple Cinnamon Breakfast Cake Squares
- 1 1/2 c old fashioned oats
- 2 tbs coconut flour
- 1 tsp baking powder
- 1/4 c flax seed meal
- 1/2 c almond milk
- 1/2 c natural applesauce
- 1/4 c honey (or agave for a vegan option)
- 1 large apple
- 1 tsp cinnamon
- 1/2 tsp all spice
- 1/2 c walnuts
Preheat oven to 325°F. Add flax seed meal and almond milk to a large bowl. Stir then let sit for 5 minutes, until it thickens. Add old fashioned oats, baking powder coconut flour, applesauce, and honey and stir until combined. Roughly chop apple and add to batter. Add in cinnamon, all spice, and walnuts and stir until combined. Grease 8″x8″ pan and scoop in batter, then smooth over with a spatula. Bake for 30-35 minutes, or until a spatula comes out clean.
