Let’s be honest, sometimes it’s so hot outside you don’t feel like doing anything.
Which is exactly why I’m going to keep this post short.
In summer I tend to have a one track mind: Hot. That’s all I can think about, especially when the humidity’s high, it’s over 95°F, and you feel like you’re swimming… In your own sweat.
All I want is something cool. And on those days I run out of Popsicles/decide 5 Popsicles in one day may be a few too many, these are my go-to.
The fruit is cold and fresh, with a tart yogurt drizzle to assure the fruit kabob isn’t too sweet. Similar to my Frozen Yogurt Fruit Pops, but a whole lot quicker to make!
And in summer, I want to be as cool as possible as quick as possible!
Summer Frozen Fruit Kabobs
- 2 kiwis
- 5 medium strawberries
- 1 nectarine or peach
- 1/4 plain yogurt or kefir
- 1/2 tbs honey
Peel kiwis. Slice all fruit in 1/2 in slices. Push kabob stick through center of fruit. Repeat until desired number of fruits have been layered on the kabob stick. Place on a cookie sheet lined with wax paper. Combine yogurt and honey in a small bowl. Drizzle over fruit kabobs. Freeze for 2-4 hours, or until completely frozen.
