I’m absolutely in LOVE with Peanut Butter and Co. peanut butter. That being said, when I walked into Tuesday Morning a week or two ago and saw an entire shelf of Peanut Butter & Co. PB, I almost had a heart attack I was so excited.
I then proceeded to buy three different flavors: White Chocolate, Maple, and Cinnamon Raisin Swirl.
And let me tell you, if you use a flavored peanut butter, or even Nutella, this recipe will be taken to the next level. I decided to use my Cinnamon Raisin Swirl Peanut Butter, and these cookies turned out with a yummy, warm cinnamon flavor underlying the rich peanut butter taste of the cookie. Even if you choose to use plain peanut butter, the chia seeds in this recipe give the cookie a wonderful texture, and your favorite protein powder can enhance these babies to an even greater extent.
As for the protein aspect of these cookies, literally every ingredient used in this recipe (aside from the baking powder and sweetener of course!) contains a significant amount of protein. Additionally, these cookies contain healthy fats and are low in sugar, meaning they’ll keep you feeling full and satisfied without severely spiking your blood sugar.
Plus, each bite is full of pure peanut butter bliss! ❤
Easiest Peanut Butter Protein Cookies
- 1/2 c peanut butter of choice (I used Peanut Butter & Co. Cinnamon Raisin Swirl Peanut Butter)
- 1/4 c protein powder (I used Trader Joe’s Soy Protein powder)
- 2 tbs egg whites
- 2 tbs chia seeds
- 1/4 tsp baking powder
- sweetener to taste
Preheat oven to 350°F. Add peanut butter, protein powder, chia seeds, and baking powder to a large bowl and stir until combined. Add sweetener (if desired) and egg whites and stir until completely combined. Scoop into small balls (1 inch across), then flatten slightly and arrange on a baking sheet. Press with the back of a fork in a cross hatched pattern. Bake for 8-10 minutes, or until firm and golden brown. Remove and enjoy!
