The weatherman has been hinting at snow for the past two weeks.
You’ve prepared in every way possible: your pj’s are inside-out, a spoon is under your pillow, and you’ve done a full-blown snow dance outside with your 5th grade class. And now it’s the morning of the alleged “snow storm.” You slip out of your bed and tip-toe over to the window by your bed. You say a quick prayer. Finally, you pull back the shade and peak out the window.
In fact, a blanket of white at least 3 inches deep covers your entire neighborhood. School is unequivocally, definitely, for sure cancelled!!
If you’re like me, then the snow days of your childhood were some of the best memories you have. Waking up to your town cloaked in a quilt of white, sledding down the hill in your backyard, rushing back inside with ruddy cheeks and numb fingers to chug down a pint of hot cocoa before running back out to build the world’s tallest snowman– it really didn’t get any better.
Well, today I’m coming at you with a recipe that combines some of your best childhood memories with dessert, chocolate, and health! By using cocoa mix and four other simple ingredients, you can create a decadent mug cake in less than three minutes– including cooking time!
I chose to use Trader Joe’s organic hot cocoa mix for this recipe because it ensures the mug cake has all the decadent hot-chocolate flavor, without tons of added preservatives! While this specific cocoa mix has more sugar than I would typically use in a recipe, I figured that since you’ll most likely only be enjoying this treat on special occasions it was okay. Or you could simply replace this mix with another one that’s lower in sugar and avoid the sugar problem altogether!
This mug cake is sweet, decadently chocolaty, and definitely the perfect dessert to satisfy any craving. Plus, it’s sinfully easy to make, as half of the ingredients are pre-measured in the form of hot cocoa mix!

The Easiest Hot Cocoa Mug Cake You’ll Ever Make
- 1 packet (1 oz, 28g) of organic hot cocoa mix (I used Trader Joe’s brand)
- 1 tbs flour of choice
- 1/4 tsp baking powder
- 2 tbs egg whites
- 1/2 tbs melted coconut oil (or butter)
Add all ingredients to a small bowl and stir until combined. Lightly grease and flour a mug. Pour in ingredients. Microwave for 1 minute to 1 minute and 10 seconds, or until risen and cooked through. Enjoy!
