Welcome to the first post in my Back to School Series!!

Going back to school leaves me with mixed feelings. On one hand, I love going school supply shopping and coming up with a ton of new healthy lunch recipes. But on the other hand… I hate having twelve assignments all due on the first day (that I may have conveniently put off doing until the night before the first day…?)
And admitting that you can’t sleep til 12, watch Netflix every night, and eat ice cream for breakfast anymore can be quite depressing. Well, I still do one of those during the school year- I’ll let you guess which! 😉
Along with all the stress to pick out the perfect first day outfit (psych! my school has uniforms) and figure out how you’re going to manage to work out, do six plus hours of homework, and get the recommended 8-10 hours of sleep every night, I’ve found that getting yourself together long enough to actually think of and pack a healthy lunch can be a little tricky. That’s why this week I’ve decided to start a back-to-school healthy recipe series full of ideas for easy to make, healthy lunches that you can make in a pinch. These lunches will be portable, easy to take with you on the go, as well as packed with protein, whole grains, fruits, and veggies- meaning they’ll keep you feeling full until that after school mad rush for food.
Additionally, I’ll be including a few breakfast ideas specifically tailored to busy weekday mornings, some after school snack recipes, and even a couple dessert ideas you can throw in your lunchbox and snack on throughout the day!

Today’s recipe is for these cute Apple sandwiches. But, plot twist, they don’t actually include any bread!!! These sandwiches use apples as the replacement for the bread, and what goes better with apples, but peanut butter, as a yummy and nutritious filling! Add a bit of granola for crunch, and honey and cinnamon for flavor and you’ve got yourself a winner of a lunch!
I paired these sandwiches with some low-fat milk and a banana, making this recipe both nutritious and delicious!

Peanut Butter Apple Sandwiches
- 1 medium apple
- 1 1/2 tbs peanut butter
- 1 1/2 tbs granola of choice
- 1/8 tsp cinnamon
- 1/2 tsp honey
Core apple. Slice into six little sandwich rounds. Spread three of the slices with peanut butter. Top peanut butter with granola. Sprinkle with cinnamon. Drizzle honey over slices. Top with remaining apple slices. Enjoy!

these are cute! In Australia most schools ban peanut butter due to allergies but maybe I could swap the pb for something else for my gals?
Aw thank you! You could try another nut butter, such as almond, if that’s allowed. If not, you could also use jam or cream cheese!
