TOMORROW IS MY FIRST DAY OF SCHOOL.
Would someone mind telling me where the summer’s gone?!
Because seriously, it disappeared in the blink of an eye.
With school starting tomorrow, I really need to get cracking on a few things I may or may not have pushed off until the last minute.
- Organizing my backpack
- College applications
- Making my lunch
- Getting my life together enough to actually comprehend that I am a senior.
Luckily, one of these things is achievable tonight. (Well, maybe two, but I’m just aiming for one. After all, I still need to get my head around the fact that school begins tomorrow. How much can you expect from me?)
Ah, school lunches. The best, and worst, experiences of my life have all revolved around you. For one, a good lunch (ie. a lunchable, leftover pizza) meant that your whole school day was 100x more manageable, as you had the delicious lunch you packed just waiting for you come 12 p.m. On the other hand, a slipshod lunch of applesauce, an apple, and a poptart thrown together as you raced out the door at 7:00 a.m. was nothing special to look forward to.
As for me, I definitely prefer the good lunch, and subsequent good day, than the random composite of a lunch I too often find myself with.
Yet, while cold pizza may taste delicious, one two many slices can leave you feeling lethargic or nauseated- exactly how you don’t want to feel at school. So, my compromise is to pack a lunch both healthy and delicious.
In comes the Greek Yogurt Chicken Salad!!
This chicken salad is incredibly high in protein, while being incredibly low in fat. You don’t find that with everyday chicken salad! Not to mention, it’s absolutely packed with spices and flavors that will meld together in your lunchbox or Tupperware overnight, leaving you with a fresh chicken salad far superior to the gloppy mayonnaise concoction you’re used to.
Plus, this chicken salad is extremely easy to make, and can be made in large batches to assure you have lunch for the entire week taken care of. Chicken salad everyday? What more could a girl ask for!?
Sorry cafeteria food, but I’d rather skip the carbs, cardboard consistency, and high prices for a healthy, protein packed chicken salad any day!
Greek Yogurt Chicken Salad
- 1 c cubed chicken breast (about 4 oz)
- 1/4 c 0% plain greek yogurt
- stevia to taste (or sweetener of choice)
- 1 tbs reduced sugar dried cranberries
- 1/4 c grapes, halved
- 1 stalk of celery, sliced
- 1/2 tsp dijon mustard
- 1 tsp parsley
- pinch of dill
- 1/8 tsp pepper
Combine all ingredients except chicken in a large bowl. Add chicken and stir until coated. Enjoy on a sandwich, lettuce wrap, or in a whole grain tortilla.
