I must say, mini muffins are fun, but they really don’t do it for me when it comes to breakfast.

My typical morning breakfast will consist of one of three options: a bowl of Puffins cereal with frozen blueberries, peanut butter and banana overnight oats, or pancakes.
However, every once in a while, I’ll find that I have a bit of extra time on my hands. So, I’ll whip up one of my favorite muffin recipes. After all, muffins are without a doubt the most satisfying breakfast. They’re both sweet and hearty, much like a good pancake recipe, yet without any of the sticky-sweet (and guilt-inducing) syrup.

Unfortunately, there are two problems with muffins:
- I almost never have enough time to make an entire batch of muffins
- Muffins usually are too small to completely sate me — and I feel guilty reaching for a second one
Luckily, with this recipe I have created the perfect solution to all of my muffin-related issues: a muffin you can make in two-minutes-flat that’s actually adequately sized. And contains the best non-pumpkin flavors of fall (because honestly, by the time November ends I’m pretty much sick of pumpkin), without any all purpose flour, sugar, or butter/oil.
How can a deliciously sweet and satisfying muffin, bursting with sweet apples and drizzled in decadent peanut butter, be so healthy?

Peanut Butter Apple Muffin in a Mug
- 1/4 c gluten free flour (I used Krusteaz Brand. You can also sub with other flour of your choice.)
- 2 tbs 0% fat Greek Yogurt
- 1 egg white (or 3 tbs egg whites)
- 1 tbs peanut butter (or other nut butter of choice)
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- pinch of nutmeg
- 1/8 tsp vanilla
- sweetener to taste
- 1/4 apple, diced
Add flour and baking powder to a small bowl and stir until combined. Add all remaining ingredients (aside from apple), stirring fully until fully combined. Stir in apples. Grease a mug with cooking spray. Scoop muffin batter in and level off. Microwave for 1 minute 30 seconds – 2 minutes. Remove, top with more peanut butter and apples, and enjoy!
