Bacon, Egg, and Cheese Omelet in a Mug

Today was my very last day of high school!

This milestone is undoubtedly bittersweet. While I’m excited beyond belief to head off to college in the fall and start a new chapter in my life, I also feel incredibly sentimental and disconsolate to be leaving my friends and teachers behind. High school really does go by in the blink of an eye. I can remember clearly walking into lunch on the first day of school Freshman year and being completely overwhelmed as I looked around and realized I didn’t know any of the girls around me.

Four years later, I know virtually everything I could know about my classmates (I’m in a class of 60, so we all know each other very well), I’ve found my lifelong best friends, and I’ve really found myself. High school changes all of us, hopefully in a good way. When I came to high school I was shy and insecure. Now, I relish making announcements in front of the entire school or dressing up as a vampire for the Blood Drive. When I came to high school I baked cookies in my free time– now I have an entire blog (and about 300 recipes) devoted to baking.

When I came to high school I never could have imagined everything I would experience over the next four years. And, in fact, I wouldn’t have chosen to go through a lot of it.

But now, I couldn’t imagine my high school experience any other way.

However, it is time to move on. I can be downcast about leaving high school… but I also have to look forward to all that is to come in college! Meaning, it’s time to come to terms with the fact that in just three months I won’t have easy access to a stocked kitchen and oven.

Meaning, it’s time for some serious microwave recipes!

Today’s recipe is for an easy tw0-egg omelet you can make in a mug in the microwave of your dorm before class. And oh man, if you have this to look forward to in the morning, you’ll never oversleep again! This omelet contains bacon and cheddar cheese, which provide a wonderful crunchy texture from the bacon yet the divine stringy, meltiness of  the sharp cheese. Plus, the taste is savory, salty, and utterly lip-smacking-good.

Additionally, this recipe only requires six simple ingredients (including salt and pepper), has 17 grams of protein, and is sure to keep you full through your 8 AM Chemistry lecture!

Not to mention, there’s practically no cleanup, as you mix and cook the eggs in the same mug! That’s my kind of breakfast! 🙂

With delicious breakfasts such as this one in my future, all I can say is: College, here I come! 😀

Bacon, Egg, and Cheese Omelet in a Mug

  • 2 eggs
  • 1 strip turkey bacon
  • 1 tbs sharp cheddar cheese
  • 1 tbs milk of choice (I used skim milk)
  • pinch of salt and pepper

Lightly grease a mug. Crack two eggs into the mug and add milk, salt, and pepper. Stir together until smooth. Cook bacon according to directions on package, then break into pieces and stir into egg mixture. Stir in shredded cheddar cheese. Cook for 1 minute 10-20 seconds, or until risen and completely cooked through. Top with shredded basil and let cool slightly. Enjoy!
