Soft and Chewy M&M Cookies for Two

If you could create your own ultimate cookie recipe, featuring all of your favorite flavors, what would it be?

Mine would without a doubt be a large, soft, and chewy chocolate chip, chocolate chunk, and m&m cookie. Stuffed with a Reese’s cup. Can you say heaven?!

On the other hand, can you say unhealthy? 😉

Instead, I’ve created a recipe for a cookie that’s super similar and almost as delicious as this decadent, 1000 calorie treat… without all the sugar, fat, and carbs!

This cookie is soft and chewy (I am definitely not a crunchy cookie girl) and exploding with m&ms. However, it’s also whole wheat and doesn’t include any butter, processed white sugar, or shortening!

I’m going to be honest, people: I can’t be trusted with cookies around. Especially not chocolate or m&m cookies. So, I decided to make this recipe even more perfect by using quantities of ingredients that yield a batch of two cookies. That’s it: two. And you can enjoy both large, soft cookies for 1/2 the calories (and 1/2 the fat!) of just one Panera m&m cookie!

*PS. Aren’t these m&ms so fun? I was given them because I participated in a student ambassador program at my high school, so they’re in my school’s colors! 🙂

Soft and Chewy M&M Cookies for Two

  • 3 tbs whole wheat flour
  • pinch of salt
  • 1/8 tsp baking powder
  • 2 tsp softened coconut oil
  • 1 tbs egg whites
  • 1/8 tsp vanilla extract
  • 1 tbs coconut sugar (or organic cane sugar)
  • 1 tsp m&ms

Preheat oven to 375F. Add flour, salt, and baking powder to a small bowl and stir together. Add coconut oil, egg whites, coconut oil, vanilla, and coconut sugar and stir together until just combined. Roll into two balls and place on a lightly greased cookie sheet. Top with M&M’s. Freeze for 5 minutes. Remove and bake for 8 minutes, or until golden brown. Enjoy!
