Apple Pie for One (In an Apple!)

Apple Pie is the quintessential American dessert.

And what’s better than apple pie in an actual apple?

I only ever have apple pie once a year. Usually, on Thanksgiving. Of course, the apple pie never really gets the attention it deserves on this particular holiday, at least not from me! In the company of a fresh baked pecan pie and mouth-watering pumpkin pie, the apple pie always seems to fade into the background. And is, as a result, almost always left all but untouched.

Well no more! Today apple pie is getting the credit it deserves. You won’t find another pie lurking around here!

You’re probably wondering why I’m getting so fired up about apple pie. Honestly, it’s because I’m seriously so excited to share this recipe with you! I mean, what’s easier than making an apple pie in an apple? There’s zero mess and no actual apple-cutting involved!

The trick is, to first simply cut the top off the apple. Then just spoon out the rest of the apple! You might want to use a knife to start out, in order to make a “dent” in the apple that you can then go off to spoon out the rest of it!

But wait, don’t throw away the apple chunks! Dump them in a small bowl and throw in some spices, coconut oil, and gf flour and pop it in the microwave for 40 seconds. Less than a minute later you have your apple pie!

Now, we’ve all heard the warnings that apple pie’s bad for you. And although two or three slices once a year won’t kill you, eating it every day will. Well allow me to blow your mind: this apple pie is good for you. It’s in an apple (I just can’t get over that!), so there’s no unhealthy crust to worry about. Not to mention, it’s practically all fruit, with just a tiny bit of coconut oil (healthy fat!) and gluten free flour (whole grains!) added. And a pinch of suga (actually it’s truvia) to sweeten it up!

So yes, this apple pie is in an apple. Yes, it’s single serving. Yes, it’s 100% good for you. And YES it takes less than 2 minutes to make!!

It’s high time for Apple Pie to get the credit it deserves, and this recipe does just that!

Apple Pie for One

  • 1 large apple
  • 1/8 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1 packet truvia (or sweetener of choice)
  • 1/4 tsp coconut oil
  • 1/2 tsp gluten free flour

Slice off the top of the apple. Scoop out the middle of the apple into a small bowl. Add cinnamon, nutmeg, sweetener, coconut oil, and gluten free flour. Stir until combined. Microwave for 40 seconds, or until soft. Scoop into apple & cover with top of apple. Microwave for 15 additional seconds. Remove, take off top, and enjoy!

To make an ‘overnight oats’ version of this, simply add about 1/3 c oats and 1/4 c milk of choice to the apple mixture after microwaving it the first time. Stir until combined, scoop back into the apple, and refrigerate overnight. In the morning, remove and microwave for 30 seconds, if desired. Enjoy!

  1. this is great but i have to caution you against calling coconut oil a healthy fat. while it may have some health qualities to it, it’s also loaded with saturated fat and the studies that have been done on it haven’t been very conclusive regarding its health benefits.
