School is crazy.
Whether you’re in school now or remember your teen years full of hours of homework, sports teams, and of course… school! Meaning that most of the time, you don’t have time to watch half an episode of Grey’s Anatomy, much less run a food blog!
That is… if you don’t budget your time. Last year I was able to survive (with time to spare!) running SST, even between creating new recipes, taking and editing photos, and writing posts. So this year I’m determined to do the same!
Even though I’ve been pretty absent for the past few weeks, I’ve been working on a few quick and easy recipes, (my favorite kind) and I can’t wait to share them with you all!
Since school is so crazy, as are work, training, and life in general, sometimes you just don’t have the time to spend prepping healthy meals, baking healthy cookies, or making homemade healthy ice cream. That is, unless the ice cream can be made in less than 5 minutes and contains 8 grams of protein and no added sugar.
Some days are so crazy that you (aka me) don’t even have time to make a simple salad to get in all your greens. But who doesn’t have time for ice cream? (Or better yet, who doesn’t want to make time for ice cream?) So why not combine both your greens and sweets to make the perfect peanut butter ice cream with healthy magic shell? That way you get in 1 1/2 cup of greens (per serving) and one serving of fruit. And did I mention, 8 grams of protein?
Oh and the magic shell only contains three ingredients, all of which are healthy and all natural! Try to get that in a store-bought bottle of magic shell and you will most likely be disappointed!
So even with school, work, or whatever you have… you can still make time for healthy ice cream!
Guilt-Free and “Green” Peanut Butter Banana Ice Cream with Healthy Magic Shell
“Green” Peanut Butter Banana Ice Cream
- 2 bananas
- 3 tbs powdered peanut butter
- 1/4 c almond milk
- 3 c raw spinach
Healthy Magic Shell
- 1 tbs melted coconut oil
- 1 tsp agave
- 1/2- 1 tbs cocoa powder (depending on desired consistency)
Cut up bananas and drop into a small container. Place in freezer for four hours, or until frozen. In a food processor, combine spinach and almond milk and blend until completely smooth (about 1-2 minutes). Add frozen bananas to food processor and blend for 30 seconds. Scrape down the sides and add powdered peanut butter. Process again until smooth.
In a small bowl, mix together melted coconut oil, agave, and cocoa powder. Scoop ice cream into cone or bowl. Drizzle with Healthy “Magic Shell” and sprinkle with cacao nibs. Enjoy!
