Whole Wheat Waffle for One

This morning I realized that although I have about 100 waffle recipes posted on here, not one of them are for a single-serving waffle.

Single serving recipes are my favorite kinds of recipes.

They’re so quick and easy. Just one and you’re done! Plus, there’s no chance of temptation for that second or third waffle, cookie, etc. because there is no second or third one!!

Sorry for my mini absence on Saturday!! I had a ton of homework, not to mention a five hour take-home chemistry test, so unfortunately I didn’t have enough time to edit and write a post, although I did have this waffle for breakfast that morning. And ohhh baby, lemme tell you: THIS IS MY NEW FAVORITE RECIPE!!!

This waffle has like a million and one perks, not even including the fact that it’s a single serving recipe! Among others, this waffle is 100% healthy & 100% natural, with no added sugar (the sweetness comes from banana, yummmm!!) and all whole grains. Plus it’s super easy to make! I basically just poured everything into a bowl, dumped it on a Belgium waffle iron, and seven minutes later I HAD THIS AMAZING SINGLE SERVING WAFFLE!!

And even better, the recipe is just as easily doubled or tripled if you’re in the mood to go ahead and whip up a batch for breakfast during the week! Time saving and single serving… what could be better?

Whole Wheat Waffle for One

  • 1/4 c old fashioned oats
  • 1/4 c whole wheat flour
  • 2 tbs egg whites (or 1 small egg white)
  • 1/4 c milk of choice (I used almond milk)
  • 1/4 tsp vinegar
  • 1/2 tsp baking soda
  • 1/8 tsp baking powder
  • 1/4 c unsweetened applesauce
  • 1/4 mashed banana
  • stevia to taste
  • pinch of cinnamon

Preheat a waffle iron. In a small bowl, combine oats, flour, baking soda, and baking powder. Stir in egg whites, milk, vinegar, applesauce, banana, stevia, and cinnamon until smooth. Grease waffle iron and pour on batter. Close and let bake for 5-7 minutes, or until golden brown (light will go off). Remove and enjoy!
