Imagine being able to eat ice cream sandwiches all day with no guilt whatsoever.
As well as no gluten, dairy, sugar, or saturated fats.
No, I’m not joking. This is very much possible… just with a few simple ingredients!
Just look at these ice cream sandwiches: they look (and taste!) like absolute heaven. Yet, you would never know that each one is so good for you!
This weekend I decided to “healthify” my absolute favorite summer recipe. Because I only just realized that it’s January 12th and below freezing out. In other words: summer couldn’t be farther away!
So I decided to bring summer to me!
These ice cream sandwiches are everything you want in a cold, decadent treat. Well, minus all the processed ingredients, that is! In fact, just by taking a look at the ingredients list it’s easy to see you’re actually eating healthy by enjoying one or two of these!
Natural, delicious goodness.
I’m not complaining.

Vegan Ice Cream Sandwiches
Chocolate Sandwich
- 33g protein powder (I used Trader Joe’s Vanilla Soy protein powder, you can also try flour but I can’t promise these results)
- 1/2 banana
- 1 tbs cocoa powder
- 1 tbs peanut butter
- 1/4 c vegan chocolate chips
Ice Cream
- 1/2 c coconut cream
- 1/2 tsp vanilla extract
- 2 tbs stevia
Preheat oven to 350°F. Mash banana in a bowl. Add all remaining ingredients and stir until combined (this may take some elbow grease but just keep stirring until it comes together!). Line a cookie sheet with parchment paper and grease lightly. Spread batter over paper, smoothing out with a spatula. Bake for 10 minutes, or until slightly risen and golden. Remove and slice into ice cream sandwich sized rectangles. Let cool completely.
In a mixing bowl, combine all ingredients for the ice cream. Whip until fluffy. Freeze for 1 hour, stirring every 30 minutes, or until solidified. Remove from freezer and let thaw slightly- enough that you can work with it. (If it’s taking too long to thaw, just pop it in the food processor and blend until smooth). Top a chocolate cookie with ice cream, then top with another cookie. Freeze, if desired, or enjoy straight away!

Is there something you could use instead of the coconut cream? I really want to make these, but I don’t have that ingredient right now!
You could try using yogurt instead! I haven’t tried it myself, so I can’t promise how the consistency should turn out, but if you use Greek Yogurt (possibly with a higher fat content) it should work! Just make sure to stir a bit more often, maybe every 15 minutes, to ensure the yogurt remains smooth (and doesn’t get icy or anything!). I would love to know what you think! 🙂
