Caprese Salad Skewers

I absolutely love sweets.

You probably already know that if you’ve been reading my blog for a while (or if you look at it’s name for that matter!). After all, when I’m not posting ice cream, cookie, or cupcake recipes, I’m creating recipes for muffins, pancakes, or any variety of granola bars. Not to mention, I eat dessert almost every night (albeit one of my healthier SST desserts!) and waffles every Sunday morning.

So yeah, I have a sweet tooth.

But surprisingly, it’s not all sweets all the time. Have you ever had a serious salt-craving? When all you want is a nice bag of Lay’s chips or even McDonald’s French fries? Well, honestly it’s a little hard to avoid reaching for that quick and easy chip bag when your arsenal of healthy savory recipes hardly exists.

So in an act against the saturated fats of chips (and my lack of self-control regarding them) today I’m introducing a skinny savory treat onto my blog: Caprese Salad Skewers!

These Salad Skewers are the perfect easy, go-to snack to quell any salt craving. They’re fresh and beautiful, as well as high in protein, so you won’t feel guilty after indulging in one, two, or five. Yet the olive oil, salt & pepper, and balsamic vinegar are so complementary you’ll feel as if you just stepped into an Italian kitchen.

Plus, they’re total crowd-pleasers and unbelievably easy to prepare! I brought a few to my grandfather’s birthday party (he’s 89!) and they were definitely a hit, let me tell you!

So the next time my salt-cravings overpower my love of all things sweet, you can bet I won’t be reaching for a bag of chips. I’ll create a healthy, savory plate of Caprese Salad Skewers to enjoy! I hope you do the same! 🙂

Caprese Salad Skewers

  • 4 oz mozarella
  • 12 cherry tomatoes
  • bundle of basil
  • 1 tsp extra virgin olive oil
  • 1 tsp balsamic vinegar

Slice cheese into 12 cubes. Push each cube onto a toothpick. Add a leaf of basil and a cherry tomato to each. Arrange on a plate and drizzle with olive oil and vinegar. Add salt and pepper to taste, if desired.
