Everything in moderation, right?
I don’t think people should live life with a strict set of restrictions, especially when it comes to food. After all, if you forbid yourself from ever touching pizza, then give yourself a “cheat day,” you’re most likely going to go over the deep end and end up eating an entire pizza yourself. Then restrict yourself even more later to make up for it. And the cycle continues.
Instead, I try to eat healthy 90% of the time, but save that extra 10% for desserts or that not-so-healthy coffee creamer I may have stored in my refrigerator! That way, I can experience all the benefits of healthy eating, without being miserable 100% of the time!
This recipe was inspired by this mindset. Because as you may notice, it includes marshmallows. Which aren’t exactly nature’s finest ingredient. (They may, however, be the baking section’s most delicious ingredient!)
However, I like to think of my desserts as measured on a scale: if you add chocolate or marshmallows, the scale tips to unhealthy. However, if you replace white flour with whole wheat flour and sugar with a healthy alternative, the scale tips back towards healthy! Until you’ve achieved the perfect balance of delicious, and nutritious!
This recipe is certainly both of those! It’s perfect, not only because it’s basically a ooey, gooey chocolate, graham cracker, and marshmallow mug cake, but because it’s just one serving. Meaning, there’s no chance of over-eating and over-indulging on an entire cake!
Not to mention, this mug cake takes less than five minutes to make and bake.
And it’s basically a giant s’more cake you can enjoy all by yourself!
S’mores Mug Cake
- 1/4 lowfat graham cracker (1 square)
- 2 tbs whole wheat flour
- 1 tbs cocoa powder
- 2 tbs stevia (or other sweetener of choice)
- 1 tbs egg whites
- 2 tbs unsweetened coconut milk
- 1 tsp melted coconut oil
- 2 tbs marshmallows
Add graham cracker to a plastic bag and crush with the back of a spoon. Grease a small ramekin or mug and add half the graham cracker crumbs, spreading them across the bottom. Spray with a bit of cooking spray or drizzle with melted coconut oil. Broil in the oven for 1 minutes, or until golden.
Add all remaining ingredients (except for marshmallows) to a small bowl and stir until combined. Pour over graham cracker crust. Microwave for 50 seonds, or until risen and solid. Top with marshmallows. Broil for 1 minute, or until the marshmellows are golden. Sprinkle with remaining graham cracker crumbs. Enjoy!
