It’s almost Friday!
Do you ever have those days where you just really need to sit down, relax, and take a moment for yourself?
Preferably with a large snickerdoodle cookie or bowl of ice cream and/or your favorite episode on Netflix?
I’ve had that kind of day almost everyday this week. However, if you checked out my last post you would know that I’ve also had an insanely hectic week. So taking a breather has been the farthest from my top priority!
But I would like to reiterate: tomorrow is Friday.
Meaning, by 6PM tomorrow afternoon many of us will be home free to relax, take a breather, and really enjoy some “me time” before heading back to work or school on Monday (or Saturday, if you’re like my mom 😦 ).
No matter how much we would like to believe it, to be honest none of us ever have the energy to come home Friday night and make ourselves that fresh batch of cookies or big dinner we’ve been hoping for. In fact, I’ll typically find myself making something simple like an omelet come Friday evening, then hitting the sack almost immediately. So much for that much anticipated “treat yourself” time!
Which is why if I really want to enjoy a big snickerdoodle cookie (or muffin) then I have two options: make it from a package or make it in the microwave.
And if I’m trying to be healthy, there’s really only one option.
Luckily, that one option includes a huge, dense snickerdoodle muffin you can make in a mug in the microwave in less than a minute! While gluten free, dairy free, and butter free, this muffin is undeniably moist and hearty – exactly what I want to come home to on a Friday afternoon! Plus, unlike that pint of Ben & Jerry’s I could so easily crack open and inhale, a muffin in a mug is a much healthier option, and won’t leave you feeling queasy and full of regret.
Instead, you can head off to bed to dream of visions of snickerdoodles dancing in your head! 😉
Snickerdoodle Muffin in a Mug
- 1/4 c flour of choice (I used gluten free flour)
- 1/2 tsp baking powder
- 1/4 tsp cinnamon
- 1/8 tsp vanilla extract
- 2 tbs coconut sugar
- 2 tbs egg whites
- 1 tbs coconut oil
Add all dry ingredients to a small bowl and stir until combined. Add vanilla, coconut sugar, egg whites, and melted coconut oil to dry ingredients. Stir until just combined. Grease a ramekin and pour in batter. Smooth on top with a fork and sprinkle with more cinnamon and sugar. Microwave for 45 seconds to a minute, or until risen and fully cooked. Enjoy!
