Nothing says summer like a fresh, cold smoothie bowl!
Especially one that’s beautifully decorated with colorful, healthy ingredients, such as raspberries, hemp seeds, and Chia seeds. And maybe a handful of granola for good measure! 😉
During the later months of the summer, I try to use my oven as seldom as possible– in order to avoid heating up my kitchen to well over 100 degrees. (And yes, I do mean degrees Celsius.)
And the perfect way to replace a meal that would typically require heat (think: breakfast- pancakes or oatmeal, lunch- chicken breast or grilled cheese) is to make a frozen smoothie bowl!
The flavor combination of this smoothie bowl is absolutely perfect! It’s slightly tangy from the raspberries, yet sweet from the frozen mango, with an added coconut undertone from the coconut milk. Think: something you would sip vacationing at a tropical paradise, sitting under the shade of a palm tree.
Since this smoothie bowl is very low in calories for a typical meal, I usually top it with granola, various seeds, and more fruit to add protein and fiber. However, if you simply want a thick smoothie to refresh yourself after coming in from the pool, feel free to drink it without any added toppings or ingredients!
After all, fresh fruits are perfectly satisfying during the summertime!
Raspberry Mango Smoothie Bowl
- 1 1/3 c frozen mango chunks
- 1/3 c fresh raspberries
- 2-3 tbs unsweetened coconut milk
- 1 scoop protein powder (optional)
Add all ingredients to a blender and blend until smooth. Pour into a glass and top with granola, additional raspberries, etc. Enjoy!
