No-Yeast Coconut Flour Pizza Crust

Today I got home from a long day of babysitting and you know what the only thing I could think about was?

Pizza.

That thick, hearty crust slathered with marinara sauce and practically dripping melted mozzarella cheese– there’s really nothing better. However, I was feeling lazy (and also broke), so I could neither take the twelve years to wait for homemade pizza crust to rise or order a delivery pizza. So, I figured I might as well pull the frozen pizza slices out of my fridge and reheat them. After all, they couldn’t be that bad, could they?

Big mistake. Even after being reheated, they were hard as a rock and tasted vaguely of cardboard and freezer burn. After one bite I tossed the things in the trash and sat there thinking: what can I make that won’t take me a year to have ready, but will be delicious nonetheless?

In comes this no-yeast-required pizza crust!

There are a few amazing things about this pizza crust I must mention before I delve into the description of its savory, Italian flavor:

  1. It’s gluten free. Meaning, for any of you gluten-free people out there, this is the perfect way to enjoy pizza without all the stomach cramps (or allergic reaction, depending on the severity of your allergy!).
  2. It’s all natural. No preservatives or added homogenization chemicals here! Just classic, fresh ingredients you can easily find in your pantry.
  3. It’s low in sugar and fat! And unbelievably low in calories! (Only 51 calories per slice! You really can’t beat that.)

Now for the flavor. There are a few very important elements that play a role in this recipe. First: the sweetness developed from the light honey undertone, which complements the nuttiness of the coconut flour perfectly. Next: the saltiness from the pinch of salt added, which strengthens the rest of the flavors and balances the honey nicely. Finally: the spices- red pepper flakes, oregano, and olive oil. Okay, I know olive oil isn’t a spice… but it has such a pronounced flavor that in this situation it can only be grouped with the other Italian flavors- oregano and red pepper. Together, they create a gorgeous trio that will leave your tongue saying:

Mamma mia!

No-Yeast Coconut Flour Pizza Crust

  • 1/2 c coconut flour
  • 1 egg and 1 egg white
  • 1/2 c water
  • 1/8 tsp salt
  • 1 tsp honey
  • 1/2 tbs olive oil
  • 1/2 tsp oregano
  • pinch red pepper flakes
  • 1/4 tsp baking soda
  • 1/2 tsp baking powder

Preheat oven to 400°F. Add all ingredients to a bowl and stir until fully combined. A soft dough should form (it may be in several large clumps, but should hold its form if picked up). Line a cookie sheet with aluminum foil. Grease the foil lightly. Scoop dough onto foil and press into the shape of a large, flat circle, about 1/2 cm-1cm thick (depending on how thick you prefer your crust). Bake for 10-12 minutes, or until golden brown. Remove and top with sauce, cheese, and other pizza toppings of choice. Broil until cheese has melted. Slice and enjoy!
