I love making birthday presents. Not just buying a few items from Target and putting together a Pinterest-worthy gift basket, but physically making the present. I feel like there’s really no downside to a homemade birthday present! After all, you have fun creating it, you save money, and you end up giving the person a super thoughtful gift that they can enjoy and remember you by. (Such as if they’re your best friend and just moved to Ireland for college this year. Still not over that one, Annabelle.)

However, sometimes gifts are even better if they’re not only homemade… but they’re edible – and delicious – too! These cookies are the perfect example. Absolutely bursting with sprinkles, this dessert is basically confetti for your mouth! And, it’s something you can feel good giving to a loved one, as it’s gluten free, dairy free, and low in sugar.

I know, you’re probably thinking: how is it possible for cookies full of sprinkles to be healthy? Well, by simply replacing the customary stick of butter with banana and a bit of coconut oil, as well as white sugar with coconut sugar, I’ve managed to create a recipe that’s yummy, healthy, and still the perfect birthday treat!

Confetti Cookies

  • 1 c gluten free flour
  • 1 tsp baking powder
  • pinch of salt
  • 1/4 c coconut sugar (or brown sugar)
  • 1 egg
  • 3 tbs coconut oil
  • 1 ripe banana
  • 1 tsp vanilla extract
  • 1/8 tsp almond extract
  • 1/4 c sprinkles

Preheat oven to 350°F. Mash banana and scoop into a large bowl. Add egg, coconut oil, vanilla extract, and almond extract. Stir until almost completely smooth. Add flour, baking powder, salt, and sugar. Stir until fully combined. Fold in sprinkles. Lightly grease a cookie sheet and scoop 2 tbs spoonfuls of the batter, placing them two inches apart on the cookie sheet.  Bake in the oven for 11-13 minutes, or until golden brown. Remove and let cool. Enjoy!
