5 Ingredient Oatmeal Cookie Chewy Bars

Imagine this: a fully raw, vegan cookie bar you can eat with zero guilt whatsoever.

That will give you energy without the sugar crash.

Believe it or not, I just described these Chewy Bars.

With only five ingredients, these chewy bars couldn’t get any healthier, easier, or more delicious! Not to mention, they literally taste like Oatmeal Cookie Dough. That being said, you can see why it’s quite easy to gobble one down in about .5 seconds without even realizing it.

But the great thing about these bars?

You won’t reach for another.

There’s practically no chance of over-eating or over-indulging with these babies (not that it would be bad if you did- they’re that healthy). Because they’re made with cashews and almonds, the healthy fats and protein will fill you up quickly, while the dates included will leave you feeling fully satisfied.

Not to mention, they’re the perfect little treats to store in your freezer and pull out when you’re craving something sweet. Simply cut them in 24 pieces, instead of 12, and you’ve got yourself some great grab-and-go snacks for whenever!

Breakfast, lunch, dinner… these bars are perfect for any time of the day! After all, with so whole, healthy ingredients there’s no reason not to indulge whenever!

5 Ingredient Oatmeal Cookie Chewy Bars

  • 1 1/2 c pitted Medjool dates (about 15 large dates)
  • 1 c raw cashews
  • 2 tbs raw almonds
  • 1/2 tsp cinnamon
  • 1/4 c sun-dried raisins

Add dates to a food processor and process until a smooth paste consistency is reached. Scrape down the sides, then add cashews and almonds to food processor. Process for about 30 seconds. Once cashews are roughly chopped up, add cinnamon and raisins and process again until the nuts are chopped up, and you can easily press together into a ball. Line an 8″x8″ pan with wax paper and scoop mixture into the pan. Press down into the pan, then smooth down. Pop in the freezer for 30 minutes, or until hardened. Slice up and store in a large container or plastic bag in the freezer. Remove and let thaw a few minutes before enjoying!
