This Chia Seed Pudding is literally a healthy Tiramisu. That is perfectly acceptable to eat for breakfast.
So basically dessert for breakfast: aka HEAVEN.

The secret to this Tiramisu Chia Seed Pudding is allowing it to sit in the fridge overnight. During those wee hours of the morning, something beautiful occurs. The flavors meld together and intensify, leaving you with decadent espresso lady fingers, vanilla chia seed pudding, and sweet strawberries. And together? The perfect recipe for a healthy Tiramisu. No mascarpone, sugar, or whole milk needed!
This recipe contains a whopping 21 grams of protein: meaning it will keep you both full and satisfied for hours. Additionally, it’s packed full of Omega-3’s, which aren’t only good for your overall health, but can help prevent against heart disease and stroke. Oh, and did I mention it contains coffee (one of my favorite things) and is completely dairy free?
As you can see, the macros can’t be beat. But let me again impress upon you: you can actually eat Tiramisu for breakfast. Without any guilt whatsoever!

Tiramisu Chia Seed Pudding
- 5.3 oz Silk vanilla yogurt (or Greek yogurt, or other vanilla yogurt of choice)
- 2 tbs chia seeds
- 2 tbs (about 12g) soy protein powder (or other protein powder of choice)
- 1/2 tbs stevia
- 1/8 tsp vanilla extract
- 1 tbs strong coffee
- 1/2 tsp baking powder
- 1 tsp egg whites
- 1 tsp almond milk
- 1/4 tsp agave nectar
- 1/2 tsp cocoa powder
Combine yogurt and chia seeds in a mason jar or bowl. In a small bowl, combine protein powder, stevia, and baking powder. Add vanilla extract, strong coffee, egg whites, almond milk, and agave and stir until combined. Grease a small ramekin or the bottom of a mug and pour in batter. Microwave for 1 minute- 1 minute and 30 seconds, or until the cake has set and pulled away from the edges. Flip over onto a plate and cut into strips, then into bite sized pieces (about 1 inch across). Drop into mason jar. Sprinkle with cocoa powder. Add fruit or chocolate chips, if desired (such as strawberries). Let sit in refrigerator overnight, or for at least 8 hours. (Flavors will meld and taste better the longer you wait). Enjoy!
