Blueberry Chia Seed Pudding

Short and sweet.

That’s how I like my breakfast.

Short: meaning it takes 10 minutes max to prepare, and preferably eat.

Sweet: meaning it’s, of course, sweet, but not chock-full of sugar or sweeteners.

This Blueberry Chia Seed Pudding is the perfect combo of the two. It takes about 2 minutes to prepare, and about 5 to eat (if on a time constraint) the next day. Or less, depending on how speedy (and late for work?) you are.

This “pudding” also has healthy fats (from the chia seeds), plenty of protein (kefir), and even some natural sugars (blueberries) to keep you going in the morning. Not to mention, who doesn’t love pudding for breakfast?

Short, sweet, and practically dessert. Now that’s my kind of breakfast!

Blueberry Chia Seed Pudding

  • 2 tbs chia seeds
  • 1 c lowfat blueberry kefir
  • 1/4 c blueberries
  • granola, raspberries, etc. for topping

Pour blueberries into a bowl, mason jar, or mug of choice. Add kefir and stir until combined. Let sit in the fridge overnight, or for at least 2 hours. Remove and top with blueberries and other toppings of choice, such as granola or raspberries. Enjoy!
