I seriously have a cinnamon addiction.
Guys, I’m not kidding- I put it on (and in) everything. Smoothies, banana “nice” cream, chocolate chip cookies, even sweet potato fries. For me, cinnamon is definitely the all-purpose spice.
The other day, I decided to try making my own nut butter. I’ve given it a few attempts before, and actually had a couple of successes (such as this Carrot Cake Nut Butter), but this time I was determined to center the recipe around my favorite spice. And what better way to feature cinnamon than in a warm batch of Snickerdoodle Cookie Butter!?
This cookie butter is the perfect combination of decadent nut butter and the sweet flavor of Snickerdoodles. Not to mention, this recipe is incredibly easy to make and costs less to make homemade than buy at the store.
And trust me when I tell you, the warm, spicy smell of snickerdoodle cookie butter filling your kitchen while you’re making this recipe is unreal.
It’s like fresh-baked Snickerdoodles… But better.
Snickerdoodle Cookie Butter
- 1 c cashews
- 1 c walnuts
- 2 tsp cinnamon
- 2 tbs coconut sugar
- 1/2 tsp vanilla
Add cashews and walnuts to a food processor and pulse for 30 seconds. Then, process until smooth- about 7-8 minutes. Add cinnamon, coconut sugar, and vanilla extract while processing once smooth. Scoop into a jar and store in the refrigerator. Enjoy!
