As you all probably know, I have a lot of food addictions.
Chocolate, cinnamon, ice cream, anything-and-everything pumpkin, the list goes on! However, although I’ve touted each of these delights over the years, I haven’t really touched on probably my #1 food addiction.
I am seriously in LOVE with popcorn. The crunch, the variety of different flavors, the airiness, and simply the “fun factor” of the snack all make it my top go-to when I’m feeling peckish. Unfortunately, this means I go through bags of popcorn pretty fast in my house.
And by “bags” I don’t just mean a measly bag of microwave popcorn- I’m talking the industrial-sized bags from Costco. Yes, my family does consume a bag of popcorn the size of a toddler every week.
(And yes, it is mostly me! ;))
Yet, with all this popcorn-eating, we obviously run out quite frequently- often a few days before any of us have time to run down the store and replenish our supply. Therefore, I need a backup.
Aka. Homemade Salted Caramel Popcorn.
This popcorn is much like kettle corn- or, rather, kettle corn’s healthier cousin. It’s got all the salted caramel flavor and even decadent chunks of melted caramel throughout, however, the popcorn isn’t slathered in the caramel. It’s lightly dusted- exactly how you want it to be if you’re consuming the whole batch in one sitting!
For this recipe I chose to use coconut oil and coconut sugar because of their health aspects- coconut sugar is lower on the glycemic index (and won’t spike your blood sugar as much as regular sugar) and coconut oil is a medium chain triglyceride- meaning it’s absorbed much quicker to the body than the long-chain triglycerides you’ll find in meats, cheeses, etc, and can even prevent Alzheimer’s.
So, you’re kind of helping your body by indulging, in this case!
And, let’s not forget, popcorn is a classic low-calorie, whole-grain snack that can satisfy a sweet craving without packing in hundreds of hidden calories.

Salted Caramel Popcorn
- 1/3 c popcorn kernels
- 2 tbs coconut oil
- 2 tbs coconut sugar
- 1/2 tsp sea salt
Pour coconut oil in a deep pot and add one popcorn kernel. Put the lid on and heat over high heat until you hear the kernel pop. Pour in the remaining stir. Wearing oven mitts, shake over heat (about 1 inch over flame/burner) for 3 seconds, then hold over heat for three seconds- for a total of one minute. Add coconut sugar and quickly replace lid. Repeat until popping stops to once every 5 seconds. Remove from heat stir in sea salt. Pour into a bowl and enjoy!
