My inspiration for this bread?
Okay, if I’m being honest it was French Toast.
Allow me to explain: I always top my French Toast with sliced fruit, specifically sliced strawberries. Then dust it in cinnamon… and drown it in maple syrup! Well, trust me when I tell you that the combination of strawberries and maple syrup is practically divine. It heightens the sweetness of the strawberry, so that even the most sour berry tastes as sweet as spring time!
So, when coming up with this recipe yesterday morning I immediately decided to combine my two favorites!
This bread is actually deceivingly healthy. While it has the texture of any unhealthy bread made with butter or oil, white flour, and white sugar, this bread is made with white whole wheat flour and sweetened with coconut sugar, natural applesauce, and maple syrup! Not to mention, the only oil you’ll find in this entire recipe is a single tablespoon of coconut oil.
Oh, and don’t let me forget the crunch! Aside from the coveted end-piece, each bite packs in a yummy, crunchy texture from the added flax seeds and “granola” topping. Although not included in the recipe, this topping is simply: a handful of old fashioned oats, a sprinkle of cloves, and a few dashes of coconut sugar.
To be honest, I’ve “evened out the edges” of this bread too many times today. Which is why there’s less than half left even though I made it yesterday afternoon.
But what can I say? Strawberries and maple have always been my weakness! 😀
Hearty Strawberry Maple Bread
- 1 1/2 c white whole wheat flour
- 1/2 c coconut flour
- 1/4 c coconut sugar
- 1 tbs baking powder
- 1/2 c unsweetened applesauce
- 1/2 c pure maple syrup
- 1 tsp vanilla extract
- 2 large eggs
- 1 tbs coconut oil
- 3/4 c unsweetened cashew milk
- 1 c sliced strawberries
- 3 tbs flax seeds
Preheat oven to 325°F. Combine the flours, baking powder, and coconut sugar in a large mixing bowl. Add applesauce, maple syrup, vanilla extract, eggs, coconut oil, and cashew milk and stir until combined. Stir in strawberries, and flax seeds. Pour into greased 9″x5″ pan, sprinkle with topping if desired (see above for recipe), and bake for 1 hr 5-10 minutes (or until a toothpick comes out clean).
